Sera’s Pancakes

I wrote this post in 2005, more than 19 years ago. It may be very out of date, partially or totally incorrect. I may even no longer agree with this, or might approach things differently if I wrote this post today. I rarely edit posts after writing them, but if I have there'll be a note at the bottom about what I changed and why. If something in this post is actively harmful or dangerous please get in touch and I'll fix it.

For three

  • 3 eggs
  • 2 cups flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 2 tablespoons sugar
  • 1 - 1 1/2 cup milk
  • 3 tablespoons melted butter

For four

  • 4 eggs
  • 2 2/3 cups flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 1 3/4 - 2 1/4 cup milk
  • 4 tablespoons melted butter

Combine eggs, flour, baking power, salt, sugar and the smaller amount of milk and whisk until smooth. Mix in melted butter then gradually whisk in milk until the batter is about halfway between the consistency of crêpes and traditional American pancakes.
